Who wants meatloaf? Whether it’s Sunday night dinner or just because meatloaf is always a favourite in so many kitchens. It’s easy to make, tastes fantastic and best of all, makes the most amazing sandwiches the next day. Here’s our tried and true meatloaf recipe!
- 1 egg, beaten
- 1/4 cup tomato juice
- 1/3 cup soft bread crumbs
- 1 tbsp Splendor Garden Parsley
- 1/4 tsp Splendor Garden Oregano
- 1/4 tsp Splendor Garden Black Pepper (ground)
- 1/4 tsp sea salt
- 1 lb ground beef
- 4 thin slices of ham
- 3/4 cups mozzarella cheese, shredded
- 1 1/2 slices mozzarella cheese, halved diagonally
**Add some roasted red pepper and onion for an additional layer of flavour.
Combine eggs, tomato juice, bread crumbs, parsley, oregano, pepper, and salt.
Add ground beef and mix well.
On a large sheet of wax paper, pat mixture into a rectangle.
Arrange ham slices on top.
Sprinkle the shredded cheese evenly on top.
Starting on the short end, carefully roll up the meat.
Pinch edges shut to contain cheese.
Move from wax paper to a rectangular pan.
Cover with foil and bake 2 hours at 350º.
Uncover for the last 10 minutes.
Add slices of cheese on top and allow to brown.
