Southwestern Potato Salad

Ingredients

  • 8 medium potatoes - can use leftover potatoes
  • 5 boiled eggs
  • 4 stalks of celery
  • 2 tsp apple cider vinegar
  • 2/3 cup mayonnaise
  • 2/3 cup plain yogurt or plain greek yogurt
  • 2 tbsp Splendor Garden Organic Southwestern Rub
  • 2 cloves of garlic, minced
  • 1/2 large onion chopped
  • 1/4 cup hot sauce - can be less
  • Salt & Pepper to taste
  • Handful of chopped chives

Instructions

Boil potatoes until just tender, or you can use your leftover potatoes to save a step. Chop the onion and celery and mince the garlic. Cut the hard boiled eggs into bite size pieces. Mix the apple cider vinegar, mayo, yogurt and then add the Southwestern Rub, minced garlic, and hot sauce. Finally, combine the eggs, potatoes, celery, onion  and dressing.  Garnish with chives and ENJOY!
