Take the tomatoes and onion, cut them into pieces. Then take your cut veggies, lime juice, herbs and salt and pepper and pulse them in your food processor until finely chopped. Not too much though. Let sit in the refrigerator up to an hour for the flavours to combine.

Once ready, serve with pita chips, tortilla chips, quesadillas or with nachos.

For some extra heat, add Crushed Chili peppers, Jalapenos or Ancho Chilis...Fresh and HOT!
