In a large bowl, combine the carrots, cabbage and onion, then set aside. In a small saucepan, mix sugar, vinegar, salt and celery seed and bring to a boil.  Remove from heat and let sit until cooled to room temperature. Once cooled, pour the liquid mixture over the bowl of shredded vegetables and toss until fully coated.

Place in the fridge for 3 to 4 hours or even overnight. Serve as a side with any BBQed meal, picnic plates or even just with a sandwich!  Enjoy!
