This elegant pasta dish may be just what you need for dinner tonight. Jumbo shells are stuffed with a plant-based creamy cashew ‘ricotta’ of spinach, dried basil, dried oregano and garlic. The filled shells are topped with a marinara sauce and panko breadcrumbs before being baked. It’s easy to make and can be prepped a day ahead.
