Mulligatawny Soup
Loved this curried soup. So easy to make. Create at your own spice dial!
2 whole chicken breasts seasoned with salt and pepper and cut in bite size pieces.
4 TBS butter
Diced fruits and veggies including a whole onion, a whole apple, a stick of celery, a carrot, a tomato and a bell pepper.
1 clove garlic, minced
1/4 cup flour
1 TBS Splendor Garden Curry Powder
1 tsp Splendor Garden Garam Masala (check out our gift packs in October)
4 cups chicken stock
1 cup cream or plain yogurt
Splendor Garden Cayenne Pepper to taste

In wide deep pot melt 2 tblsp butter and saute chicken till brown. Remove. Add rest of butter. Add diced veggies, garlic and fruit. Saute till starts to turn brown. Sprinkle in flour, Curry Powder and Garam Masala. Add chicken stock, stir, simmer till soft. Puree. Add cream and chicken. Warm through. Season with salt and Cayenne. I ADDED ONLY A PINCH!

Replacing spices with salt just makes sense! This recipe still has salt and some fat but in moderation. We need this to feel full. At least I do! This recipe is a Deliciously Spicier! Creation.

Cheesy Chicken Roll Ups

Cheesy Chicken Roll Ups

Prep time: 30 minutes

9-12 lasagna noodles
Sauce of choice. I used two jars of spinach and tomato.
2 cups of cooked chicken. (I used leftover chicken breast strips seasoned with Splendor Gardens Italian Seasoning)
Splendor Garden Oregano
Splendor Garden Garlic Powder
3 cups of shredded Mozzarella or cheese of your choice. I used marble.

Spray an 8×8 or a big pan like i used with a non-stick spray and pour 1/2 of your sauce. Just enough to cover the bottom of your pan.
Boil 8-10 cups of water in a large pan, cook lasagna until al dente. Cook extra just in case you break some.
Rinse and drain with cold water to prevent them from sticking together. Lay out paper towel and lay them out individually and blot dry.
Spread sauce over each one and sprinkle Splendor Garden Oregano and Splendor Garden Garlic Powder over top.
Put a spoonful of chicken and some cheese on one end of each noodle and roll them up.
Place in pan and finish up the sauce and cheese. I had leftover ground chicken and peppers to use so I went crazy with toppings. Do as you like.

Bake at 350F for 30 minutes.
