INGREDIENTS:

DIRECTIONS:

  1. To make the lemon butter sauce, melt 2 tablespoons butter in the skillet. Add garlic and cook, stirring frequently, until fragrant, about 1 minute. Stir in lemon juice; Seafood Seasoning and season with salt and pepper, to taste.

Freezer Apple Pie Filling

The air has been crisp and fall is in the air! Apples are plentiful at this time of year. The squirrel in me is always looking to store my fresh organic produce to enjoy in future months. I have been making Freezer Apple Pie Filling from the crab apples on my tree for years and I love how one jar is perfect for one pie.

Freezer Apple Pie Filling

  1. Zest & juice the lemon and set aside.
  2. Peel and slice apples. (NOTE: When I use crab apples, I tend to leave the skin on. It disintegrates during the cooking process but you can remove the skins if you prefer.)
  3. In a large pot, combine both sugars, corn starch, cinnamon, nutmeg, salt and water. Bring to a boil while whisking over medium-high heat and let boil 2 minutes until thick and bubbly. Stir in apple slices and cover.
  4. Reduce heat to low and let simmer 10 minutes or until apples begin to soften. They do not need to be completely cooked! Remove from heat and cover. Let cool about 30-40 minutes, checking periodically. Your apples should be soft but not mushy.
  5. Ladle equal amounts into glass jars. I found that one quart jar is exactly one 9″ pie!
  6. Let cool on the counter and then freeze for up to one year.
 Defrost in the refrigerator overnight and bake as normal recipe calls for.

  1. Cinnamon Replacement. Recipes often call for cinnamon. Raise the bar and grab this blend instead. Use equal parts.
  2. Oatmeal. Sprinkle Apple Pie Spice on your Splendor Garden Oatmeal in the morning, and instead of using water in your oatmeal use apple juice or apple cider. Yum!

  9. Popcorn. Sprinkle a little on freshly popped and buttered popcorn, it makes a great snack.

Easy Peezy Greek Dip

I didn’t even get a chance to get this Easy Peezy Greek Dip to the table and the whole family was digging in to it. WAIT!, I yelled. SAVE SOME FOR ME!!!

This dip couldn’t be easier because all of the ingredients are readily available and it comes together in minutes. I love taking this dip to any gathering because it’s loved by everyone. So delicious.

Easy Peezy Greek Dip

  • Ingredients:
  • 1 x 8oz Cream Cheese
  • 1/4 C Sour Cream
  • 3/4 C Crumbled Feta Cheese
  • 1 Tbsp Splendor Garden Greek Seasoning
  • 3 Tbsp Organic Greek Salad Dressing
  • Diced Cucumber
  • Diced Tomato (Seeds Removed)
  • Diced Green Pepper
  • Diced Red Onion
  • Crumbled Feta Cheese

Blend softened cream cheese, sour cream, feta cheese and Greek Seasoning until combined and creamy smooth. Spread as base layer on a serving plate. Drizzle prepared Greek dressing on top of the base layer. Then, sprinkle cucumbers, tomatoes, green pepper, red onions and feta cheese. Enjoy with tortilla chips, vegetables and pita chips.

Greek Chopped Salad

I’ve been on the hunt for a salad that fills me up. One that get’s me through my long days of running here, there and well….everywhere! It needed to have loads of protein, be delicious and of course nutritious. I want a salad that is packed with all of the nutrients my body needs so I don’t land elbow deep in the doughnut box at 2PM. I think I found it!

Greek Chopped Salad –

Not just any Greek Chopped Salad. This one has garbanzo beans (chickpeas!) Why had I never thought about that?! Chickpeas are little nuggets of power and are oh so good for you.

 This recipe is from The Garden Grazer who like me, loves all things wholesome and chocked full of vitamins. I adapted her recipe using Splendor Garden Organic Spices & Herbs!

Vegan, gluten-free

Ingredients
1 hothouse cucumber
4-5 ripe roma tomatoes
1 large red bell pepper
1 small red onion
15 oz. can garbanzo beans, rinsed and drained
Optional: olives, dairy-free feta, pepperoncini

{For the dressing}
3 Tbsp. red wine vinegar
2 Tbsp. olive oil
1 tsp. dried oregano

1 tsp. Splendor Garden Greek Seasoning Blend
1/4 tsp. salt

Directions
Make the dressing: in a small bowl, combine all ingredients and whisk to combine. Set aside.
Dice the cucumber, onion, bell pepper and tomatoes (removing any excess liquid from tomatoes).
Put vegetables and garbanzo beans in a large bowl.
Add dressing and toss to combine.
Can eat immediately or refrigerate for at least an hour to let flavors combine. Some dressing will settle on the bottom, so stir before serving.

Cheesy Garlic Fingers

Life is SO busy! I can’t believe how quickly a day flies by and there I am, wondering what I’m going to make for dinner…again. Thank goodness for a freezer stocked full of fresh garden produce, baking and casseroles. When I am in the mood to cook, I always make extra so that I can pull leftovers out of the freezer on a whim.

Remember that post for the Herbed Fail Proof Pizza Dough?

Life got in the way and I couldn’t make pizza that night so I split the dough in half, wrapped it and froze it for another day. Last night, I pulled it out and decided to make some cheesy garlic fingers. My whole family loves them. They’re quick, easy and delicious.

Cheesy Garlic Fingers are a quick and easy side to any dish. Try them with a soup, pasta or bug yummy salad!

The recipe couldn’t be easier once you’ve followed the Herbed Fail Proof Pizza Dough Recipe.

Step 1 – Preheat Oven to 400 degrees.

Step 2 – Flour surface and roll out the dough to about 1/4″ thick and in a rounded square

Step 3 – Brush with a mixure of melted butter, Splendor Garden Organic Parsley and Splendor Garden Organic Garlic Granules (amounts to taste, I used 1 tsp of each)

Step 4 – Top with your favorite cheeses; add as many or a little as you’d like.

Step 5 – Bake in preheated oven until golden brown. Approximately 15 minutes.

Enjoy with a marinara dip!

Crispy Baked Lemon Pepper Chicken Wings

Every now and then, I crave pub grub and nothing beats that craving like chicken wings. I’ve been on the hunt for the perfect, easy recipe and I have found IT! Behold…

Crispy Baked Lemon Pepper Chicken Wings by the wicked noodle

Only 4 Ingredients and you’re well on your way to the perfect Lemon Pepper Chicken Wings!

  • 1/4 cup Vegetable or canola oil
  • 1/4 cup Butter

Instructions

  1. Preheat oven to 400F.
  2. Toss chicken wings and oil. Place wings on a wire rack set on a baking sheet, taking care not to crowd wings. Bake for 50-60 minutes or until golden brown and crispy.
  3. Remove wings from oven. Mix melted butter and lemon-pepper seasoning and brush liberally onto wings (stir butter mixture as you go to make sure you have plenty of seasoning for each wing).
  4. Place on platter and serve immediately.

Notes

Be sure your sheet pan has sides to catch the grease! If you use a flat pan that has no sides, the grease will drip onto the bottom of your oven and cause it to smoke.

Okay Splendor Garden fans…We just upped the anty on pizza! Who loves biting in to a rich, cheese and tomatoey, assault of the senses slice of heavenly pizza? Everyone. That’s who. Raise that bar WAY up and make yourself the most glorious pizza dough EVER.

Makes 2 Pizza Crusts

  1. In a large bowl fit for a stand mixer with a dough hook, combine water, yeast and honey. Wait 10 minutes for it to do it’s thing.
  2. Add in remaining ingredients.
  3. Turn the stand mixer on level 3. Set a timer for 6 minutes and walk away.
  4. After 6 minutes,  remove the dough ball from the bowl. Coat the bottom of the bowl with a little olive oil and return the dough ball to the bowl. Sprinkle a little olive oil on the dough ball and cover the bowl loosely with plastic wrap.
  5. Set in a warm place for 1 1/2 – 2 hours.
  6. Bask in pizza dough perfection.

My go-to side dish for anytime of year. It’s a hug in a dish. The salty, savory, sweet and buttery nodes hit every craving imaginable and I will guarantee that your guests will be taking seconds!

Herbed Roast Potato Medley

Preheat oven to 400 degrees. Place root vegetables in a baking dish or sheet pan. Drizzle with Olive Oil, Herbs de Provence, Salt and Pepper and toss to coat. Even out the medley in your dish and dot with cubed butter. Cover with aluminum foil and roast for 40 minutes. Remove foil, increase your oven to 425 degrees and roast for 20 minutes more. Remember to toss the medley every 15 minutes or so to ensure that nothing is sticking.

I have been living off of Avocado, Tomato & Cucumber Salad recently. It’s simple, easy and oh so delicious. All of the ingredients have natural flavors, are fresh, readily available and chocked full of nutrients.

Recipe:

 

Dice Avocado, Cucumber and Tomatoes. Do as much or a little of each as you like. Add chopped green onion and chopped fresh parsley.

Drizzle with Extra Virgin Olive Oil and grind in a good portion of salt and a sprinkle of Splendor Garden Organic Black Pepper Ground to taste. Mix it all together and enjoy!
