Dill, Chickpea and Feta Salad

With summer just around the corner, it is time to get out the BBQ, invite a few friends over and get grilling. What better compliment could you have with you shish-kabobs or souvlaki, than this amazing Italian pasta salad from Lisa Lavery at Chowhound. With the bold flavours of Splendor Garden dill, parsley and black pepper, this salad is sure to be a hit.

A pasta salad recipe perfect for picnics and barbecues made with cucumbers, chickpeas, and feta cheese in a bright dill and caper dressing.

Apple Breakfast Muffins

This Apple Breakfast Muffin is one of those recipes that you hold close to your heart. It’s the stuff that mothers are made of. Every time I bite into these muffins, a tidal wave of childhood memories come flooding back to me. My copy, is on a yellowing piece of stiff paper. Definitely not a flashy white recipe card. It’s been used many times and shows its wear.

My recipe originally calls for crabapples, but I often use it with any other tart apple during the non-crab months. I remember very clearly being small enough to sit on the counter-top to help stir that brown sugar with the apples. Oh my goodness…me.

Please enjoy this recipe, that was passed down to me. All great things were meant to be shared.

Apple Breakfast Muffins

Mix the first three ingredients in a medium sized bowl and let stand for 30 minutes. Stirring every 10 minutes. Try to resist ‘sampling’ the apples.

  1. In a large bowl, beat egg. Add oil and beat again.
  2. Mix in the apple mixture until well combined.
  3. Add in the dry ingredients and mix until batter becomes moist.
  4. Try to resist eating the entire bowl of batter. It is literally better than cookie dough!

Fill muffin tins 3/4 full and bake at 350 degrees for 34 – 40 minutes or until a toothpick comes out clean.

Makes 12 muffins.

Pumpkin Spice Muffin with Spiced Cream Cheese Frosting

This pumpkin spice muffin is one of my go-to recipes. We all have them…the handful of recipes that you always go back to because you know they are just THAT good. Not only are they flavourful and low fat, they freeze like a dream! I always freeze half the batch so that I can enjoy them twice!

Top it with Spiced Cream Cheese Frosting for an extra special treat or enjoy without for a weekday snack.

Pumpkin Spice Muffin with Spiced Cream Cheese Frosting



Preheat oven to 400 degrees. In a large mixing bowl, beat eggs, sugar, pumpkin and oil until smooth. Combine flour, baking soda and baking powder in a separate bowl. Add to the pumpkin and mix until just combined. Fill paper lined cups 3/4 full. (I use an ice-cream scoop to make every muffin exactly the same size)

Bake muffins for 16 – 20 minutes or until muffins test done with a toothpick. Cool in pan for 10 minutes before removing to wire rack.

NOTE!! I’ve tried all kinds of muffin liners and the Reynolds foil line cups are my absolute favorite. They give the muffins a crispy coating, yet leave the centers moist and delicious. You can find them at most grocery stores.




Beat cream cheese, butter and vanilla in large bowl with mixer until blended. Gradually beat in sugar. Blend in pumpkin spice and top cooled muffins.

The BEST Marinated Chicken

I made the BEST chicken Marinade last week and I need to share it with you. I love to try new things. New activities, seeing new places, and of course tying new recipes. I came across this recipe and made some changes to the original one to suit my tastes.

I mixed all of the ingredients together and poured it over top of lean chicken breast. I let it marinate for about 24 hours but you could certainly cut that down if needed.

This would be a fantastic recipe to throw together in the morning!

The BEST Marinated Chicken

This marinade was outstanding. It was BY FAR the best I’ve ever tasted and I’m positive you’ll agree.



Mix all ingredients together and pour on top of the chicken breast. Cover with plastic wrap and marinate for as long as possible up to 24 hours.


Grill chicken breast on the BBQ on medium high heat basting once each side with remaining marinade.



Let chicken rest for 5 minutes before cutting.

Gluten-Free Ham & Cheddar Quinoa Bites

Like many of you, I’m constantly on the go. And by constantly on the go, I mean my multi-tasking abilities are that of an Olympic level one man band. I get myself into trouble when I haven’t had a decent breakfast. No…four cups of coffee is not breakfast! I need something that will fuel my body and my brain all through the morning. It needs to be a flexible recipe so that no matter what is left over in my fridge, I can easily throw together a batch. Easily replace the ham in this recipe with the same amount of chopped veggies.
Ham & Cheddar Quinoa Bites pack the protein punch I need to keep me satisfied all morning long. They taste GOOD! <- (that right there is reason enough for me.)


Gluten-Free Ham & Cheddar Quinoa Bites

3/4 cups quinoa (rinsed)
1 1/2 cups water (or vegetable broth or chicken broth)
2 eggs (lightly beaten)
2 cups diced ham (finely diced)
1 cup yellow onion (finely diced)
1 garlic cloves (finely minced)
1 1/2 cups shredded cheddar cheese
1/2 teaspoon Splendor Garden Organic Paprika
 Splendor Garden Organic Crushed Chili Peppers (optional to taste)
  1. In a medium sauce pan, combine quinoa and water (or broth) and cook according to package directions. Let cool.
  2. In a large bowl, combine cooled quinoa, eggs, ham, onion, garlic, cheese and spices.
  3. Preheat oven to 350° F. Spray mini-muffin tins with cooking spray.
  4. Put a heaping tablespoonful of quinoa mixture into prepared muffin cups. Bake for 15 to 20 minutes, or until edges turn golden brown. Remove from oven and let cool for 5 minutes and then gently remove from pan to cool completely.
