The BEST Marinated Chicken

I made the BEST chicken Marinade last week and I need to share it with you. I love to try new things. New activities, seeing new places, and of course tying new recipes. I came across this recipe and made some changes to the original one to suit my tastes.

I mixed all of the ingredients together and poured it over top of lean chicken breast. I let it marinate for about 24 hours but you could certainly cut that down if needed.

This would be a fantastic recipe to throw together in the morning!

The BEST Marinated Chicken

This marinade was outstanding. It was BY FAR the best I’ve ever tasted and I’m positive you’ll agree.

INSTRUCTIONS:

Mix all ingredients together and pour on top of the chicken breast. Cover with plastic wrap and marinate for as long as possible up to 24 hours.

Grill chicken breast on the BBQ on medium high heat basting once each side with remaining marinade.

Let chicken rest for 5 minutes before cutting.

Gluten-Free Ham & Cheddar Quinoa Bites

Like many of you, I’m constantly on the go. And by constantly on the go, I mean my multi-tasking abilities are that of an Olympic level one man band. I get myself into trouble when I haven’t had a decent breakfast. No…four cups of coffee is not breakfast! I need something that will fuel my body and my brain all through the morning. It needs to be a flexible recipe so that no matter what is left over in my fridge, I can easily throw together a batch. Easily replace the ham in this recipe with the same amount of chopped veggies.
Ham & Cheddar Quinoa Bites pack the protein punch I need to keep me satisfied all morning long. They taste GOOD! <- (that right there is reason enough for me.)

Gluten-Free Ham & Cheddar Quinoa Bites

3/4 cups quinoa (rinsed)
1 1/2 cups water (or vegetable broth or chicken broth)
2 eggs (lightly beaten)
2 cups diced ham (finely diced)
1 cup yellow onion (finely diced)
1 garlic cloves (finely minced)
1 1/2 cups shredded cheddar cheese
1/2 teaspoon Splendor Garden Organic Paprika
 Splendor Garden Organic Crushed Chili Peppers (optional to taste)
  1. In a medium sauce pan, combine quinoa and water (or broth) and cook according to package directions. Let cool.
  2. In a large bowl, combine cooled quinoa, eggs, ham, onion, garlic, cheese and spices.
  3. Preheat oven to 350° F. Spray mini-muffin tins with cooking spray.
  4. Put a heaping tablespoonful of quinoa mixture into prepared muffin cups. Bake for 15 to 20 minutes, or until edges turn golden brown. Remove from oven and let cool for 5 minutes and then gently remove from pan to cool completely.
